Its a big topic, books are written on the subject. Can you narrow it down?
I use knightly orders myself. They make great organizations.

Green Knight

Knights of the North (LN)
Colours: White and red
Insignia: Wolf’s head
Words: We Do Not Yield
History: The Knights of the North were officially founded in 898
HC to combat the growing number of monsters and Rjurik raids that had
begun to plagued Dhoesone. As the power of the Empire declined further
and further the people of this far and unimportant outpost had to look
elsewhere for protection.

Organisation: The order has varied in size over the years, but has
never been very large or very rich. Between 100 and 300 knights and less
than 1000 men at arms is all the order can afford. There is also the
difficult task of finding enough able recruits in such a lightly
populated land. Perhaps as a consequence of this you do not need to be
rich nor noble to join. A quick wit, a strong arm and a will to fight is
all that is required. Training will be provided as will all other things
the knight might require. In return the order demands absolute obedience
and a commitment for life. The order is very militant and apparently
have little need for fancy titles or secret societies. The order closely
mirrors Anuirean military organisation with the commander holding the
rank of Knight-Commander of the North.

Green Knight

Iron Guard (LE)
Colours: Grey and rust
Insignia: Steel gauntlet
Words: Unbowed, Unbent, Unbroken
History: The Iron Guard is a relatively young order, but one with
ancient roots. In 267 HC the Duke of Ghieste, part of what today is
known as Ghoere took it upon himself to create a formidable fighting
force like that of the Knights of Haelyn, but without any ties to any
church or religion. At this point in history the knight was just coming
into his right and was easily the dominant force on the battlefield.
Every noble regent would eventually create their own force of heavy
horse, but the Duke Ghieste was the first and must successful. His Iron
Guard became legend for their fierceness, courage and ability to emerge
victorious over apparently superior forces. During the 6th century HC
much of the steam had left the order. They had become corrupt, soft and
after siding with the wrong part in a short struggle for the throne fell
into obscurity and was lost to history. Then, during the Century of War
a mercenary company appeared that closely matched the Iron Guard in both
appearance and philosophy. Their fees were high but wherever they went
victory was ensured. They fought on all sides and bowed before no
master. But during the 13th century they again fell into obscurity. In
1401 they appeared again, led by Orthiwen Tael, a man of unknown blood,
they were instrumental in defeating the Pretender Warlord Rannech Oxyr.
He was generously given land along the Maesil, close to Ghieste. Thus
began the Tael Dynasty, and the Iron Guard has always been there to
ensure victory.

Organisation: Based on martial virtues not religious ones, the order
holds skill at arms, leadership and statemanscraft above all. They
believe strongly in the ideal Great Warrior, who by right of his might
and the power of his armies takes what is rightfully his.

I would recommend looking for the paladin's handbook from the 2nd edition. If I remember right it has several orders of knights that could be easily adapted.

Knights_ available.

Just trying to save the guy a buck or two on resources. If all you want is concepts and ideas, why spend $17 on a new book when you can spend < $5 on a 2nd edition book. Of course you could always post a thread on a message board and get some suggestions for free. ;)

The Military Order of Strathcarron of the Sword (aka the Knights of
Strathcarron)
Grand Master Gavin Deadwater
http://home.mchsi.com/~kgauck/taelshore/gavin.htm
* Organization: Egalitarian, Cohesive, Grandmaster
The Knights of Strathcarron have a Grandmaster, who acts as captain of the
knights unit which this unit can form. The Grandmaster is traditionally
selected from the upper nobility of Talinie. The current Grandmaster is the
brother of the Earl of Lindhoime. The knights also have four lieutenant
knights. The rest are knights. The Knights of Strathcarron are collegial,
egalitarian, and are devoted to the cause of defending Talinie from the
goblins of neighboring countries. Knights too old to fight are known as
knights-elders, and advise the order. Knights-elders must pay dues, but are
not required to maintain armor, weapons, and horse. Recruits to the order
too young to fight are squires, and are assigned to a knight who supports
and trains the squire in the traditional fashion.
* Domain organization: 1 law holding Freestead and one in Serimist, free
muster of one knight unit based on the membership of the order.
* Income: The law holdings provides 1GB of income in the fall of each year.
Dues provide another source of income. The wealth of the members of the
order provide for all of the upkeep of the member`s. Members not able to
maintain the equipage of a knight are suspended. Members must support
themselves and pay dues.
* Activities: During war, the order forms a knight unit at the expence of
its members to defend Talinie. During peace it performs several functions.
The Knights of Strathcarran provides training for its members, assigns
mentors to young squires, and maintains intelligence on the activities of
the neighboring goblins, mostly in terms of their military power and
political will to attack Talinie. The order has several times in its history
assigned quests.
* Domain Activites: Once per season the Order attempts an Espionage action
against both the Five Peaks and Thurazor. Its remaining action varies. The
order would attempt to fill any vacant holding slots in law or guild to
extend its control in Lindholme, Serimist, Winter`s Deep, or Freestead. The
Order does engage in building activities to facilitate heavy cavalry
operations against the goblin realms. This has included stables in the four
border provinces, some stone bridges, roadbuilding, and establishing
blacksmiths, grooms, and farriers at their stables. The order has stables
and facilities at Newcayne, Strathcarron, Clashness, and Culkien. Knights
with estates on the border often have enlarged stables, capable of
supporting 50 or more horses if neccesary.
* Membership: To join, a human must swear an oath to protect Talinie against
all Goblin incursion; be able to support himself in knightly arms, armor,
and horse; as well as pay dues. Novices are required to serve the order for
six months, serving as squires, grooms, and servants to the order. These
modest duties can be dispensed of by cash payment of 1000 gp. Those
prospective members who are not yet knighted, but expect to become so (young
nobles) are taken on as squires and assigned a mentor knight. Members are
freely allowed to undertake other obligations that don`t conflict with the
order. Dues are 500 gp per year. Typically there are 40-60 full members,
20 squires, and one or two dozen knights-elders.
* Special: The members of the Order are able to take the Hated Foe
(Goblinoids) feat.
* Politics: The Knights of Strathcarron takes no interest in politics and
will lend its holdings to the Thane as requested. The Order opposes any
softening of the stance against either Thurazor or the Five Peaks.
